Very tart and tangy, ginger-lemon tea vibes are crazy, chamomile too. Aromatics fly out of the glass here. Wild, zingy bubbles going everywhere. Sour-tart-sweet goes off with powdery, chalky tannins in the mix. It’s a cracking drink, quite a bit going on, lots of excitement to guzzle down.
Tim Wildman became a Master of Wine (MW) in 2008. He lives in the UK and does wine in Australia. But the wine that he makes is totally out of all “textbook” standards. He makes only pet nat and has fun blending different grapes from Riverland every year. These wines are fun, unpretentious and just all-around delicious!
