Decant for a few hours, drink slightly chilled. Lovely nose of violets, rhubarb, crushed strawberries, blackcurrant and some oriental spice. The palate is rich, but not overextracted, making the acidity shine like a diamond. Just a brush of tannins to tighten things up. Lasts long into the night and makes one sad that they only bought a single bottle.
After completing his wine science/viticulture degree at Adelaide University, Patrick relocated to the Yarra Valley where he worked as a winemaker for Thousand Candles and made wine under his own “Patrick Sullivan” label. He is also the Australian wine buyer for renowned European wine importer Les Caves de Pyrene and the Terrior restaurant group in London. The wines Patrick produces are of nourishment and life. All reflective of wither a place or intention. Patrick and his wife Megan have recently purchased a wild property in West Gippsland where they plan to farm grapes and make life.
