Now we’re talking! A solid new edition to our pet nat family. Light foam and a significantly light aroma profile. The notes that really come out are red berry fruit and pomegranate. Body is light with a string of pleasant, but not zippy acid. All Sauvignon Blanc with 0.1% of a mystery red grape to give it this funky color. Very nice to smash on a hot summer’s day.
Small batch winery Dormilona is run by Jo and husband Jimmy. The name Dormilona means ‘lazy bones’ in Spanish and reflects their laidback approach to winemaking and her nickname during her winemaking years in Spain. She makes wine to express the vintage, the conditions, the site, the soils and best of all, uses very little intervention.
