We could drink this out of a faucet! Pale lemon-green in the glass. Wonderful aromas of green apple juice, chamomile, peach and some wet stones. Body is light, but bursting with acid and fruit. When drinking this, all worries go away and you’re transported onto a sun-bathed meadow where the grass smells fresh, the animals roam around freely and everything is ok.
Nav Singh is the man behind Domaine Simha – simple philosophy, unmatched experience. In his winemaking, he uses low to no additives, ferments in amphora and experiments with whole bunch fermentation and amphora ageing. Fruit is sourced from Upper Derwent, Coal River and Huon Valley. Some of the best sommeliers of Australia consider Nav’s wines as an equivalent to premium Burgundies that they have been pouring for years. Strong words backed up by stellar quality.
