“We can’t stop here, this is bat country!” Ah, the mad scientist category of skin-contact wine. Have you ever heard of sous voile? Or solera? Or lunar cycles? Well strap in, we’re taking you for a ride down the rabbit hole. This wine is marked by enormous salinity, but is also beautifully balanced by a streak of mouth-watering acidity. A true UFO.
A collaboration between two legends – David Fesq (Fesq & Co. importer) & Ray Nadeson (Lethbridge winemaker) – Between Five Bells is a winery that made its mark with a compelling combination of drinkable and delicious, but also super complex and interesting wines. The majority of the fruit for the wines of Between Five Bells comes from various parts of Lethbridge?s vineyard blocks, at the foot of Mt Dunedin, in Geelong. Everything is handpicked, 50% de-stemmed and co-fermented in the open air under the sky and the sun. All the blending is done at the same time and judged solely on taste.”
