After 7 days maceration post-ferment, the wine is gently basket pressed and racked to stainless vats (50%) and old French oak hogsheads (50%) for 6 months maturation. A very eccentric, atypical and slightly oxidative, yet very drinkable, complex and enjoyable Sauvignon Blanc coming from Simha. There is very little typical varietal character here and the style is more in the 'natty' white wine camp, with somewhat dominant phenolic notes, some terracotta tones of amphorae and oxidative complexity. However, if you don't mind that, this is a lovely little drop - the relatively light body of the wine and incisive acidity make it a great food wine.

Most likely this kind of wine isn't everyone's cup of tea, but is truly a raw expression of nature. Not funky or "natty" in any way, but rather very clean, precise and finely crafted. Chardonnay seems to lend this wine a kind of richness and body while Riesling comes in with the zippiness. The quality here is obviously top-notch and while there's certain rustic roughness around the edges, the wine is wonderfully pure and precise from the beginning to the end, not showing any excessive funk or such.

A nice, refreshing and fruity Pinot Gris that lies somewhere between the refreshing yet simple (and often tasteless) Italian Pinot Grigio and the more fruitier and rounder style of German Grauburgunder. This wine is a bit lighter and somewhat higher in acidity than your average Pinot Gris, but it also has much more fruit and depth than your run-of-the-mill Pinot Grigio. Overall this is quite reliable and tasty effort, making it a good everyday wine for a wide variety of food. Perhaps best served with white meats, grilled fish or heavier salads.

We could drink this out of a faucet! Pale lemon-green in the glass. Wonderful aromas of green apple juice, chamomile, peach and some wet stones. Body is light, but bursting with acid and fruit. When drinking this, all worries go away and you're transported onto a sun-bathed meadow where the grass smells fresh, the animals roam around freely and everything is ok.

Studebaker Bianco is one conclusion in a series of experiments in texture and tannin in white wine, a post-punk, post-natural, tangy, minerally, crunchy gargle. The overt green-melon ?fruitiness? of this wine is a pleasant surprise. Texturally it?s a joy. Leaving the wine unfiltered retains viscosity as well as almond blossom aromatics. The ?phenolic?, skinsy crunch (which comes from the fermentation on skins) acts as a kind of picture frame around the wine defining the honeydew and pear flavours complemented by ginger spice confined within these borders.

The aromas seem to leap from the glass, offering up a fragrant spray of sweet berry fruit - noticeably grapey in character, but there is also some ripe blueberry, too. No need to decant, just drink it straight from the bottle.

Pale and cloudy in the glass. Superb aromatics - at first some strong flint dominates, but as the wine breathes, it gives way to sweet-ish red fruit and herbal sensations. Very light on the palate. PLC has aged a 60% expression of their original gin in custom coopered barrels which formerly held American bourbon, then most recently Barossa Valley Shiraz - recharged and now giving new life to this shiraz barrel-aged gin. This overproof blush coloured spirit is soft and silky with a gentle shiraz note and rich oaked rye back-note. It's punchy, yet still maintains the vanilla and floral notes.

Allegra is Lethbridge's ?reserve? Chardonnay; not unrelated to the regular release, but here there is greater richness to the nose and palate. There is a touch of butter over the figs, nuts and minerals; this sees 100% malolactic but the effects are subtle and finely judged. There?s still a real acid spine holding all this together and a powdery richness from the oak. An all-wild yeast ferment has given this a wonderfully supple texture; there?s nothing feral about it. Medium-full bodied by Chardonnay standards, with great evenness along the tongue; this is where the quality really shows. Medium-long dry minerally finish. This should age beautifully for 2-3 more years. Exquisite Chardonnay.
