After 7 days maceration post-ferment, the wine is gently basket pressed and racked to stainless vats (50%) and old French oak hogsheads (50%) for 6 months maturation. You have to love how Amato makes these young wines drinkable straight off the bat, something that’s hard to find with old school winemakers nowadays.

A very eccentric, atypical and slightly oxidative, yet very drinkable, complex and enjoyable Sauvignon Blanc coming from Simha. There is very little typical varietal character here and the style is more in the 'natty' white wine camp, with somewhat dominant phenolic notes, some terracotta tones of amphorae and oxidative complexity. However, if you don't mind that, this is a lovely little drop - the relatively light body of the wine and incisive acidity make it a great food wine.

A remarkably well-made, pure and nuanced orange wine that is very savory and simply dead-serious in style. Definitely a crowd-pleaser note to the nose, but offers so much precision on the palate. Chardonnay seems to lend this wine a kind of richness and body while Riesling comes in with the zippiness. The quality here is obviously top-notch and while there's certain rustic roughness around the edges, the wine is wonderfully pure and precise from the beginning to the end, not showing any excessive funk or such.

A nice, refreshing and fruity Pinot Gris that lies somewhere between the refreshing yet simple (and often tasteless) Italian Pinot Grigio and the more fruitier and rounder style of German Grauburgunder. This wine is a bit lighter and somewhat higher in acidity than your average Pinot Gris, but it also has much more fruit and depth than your run-of-the-mill Pinot Grigio. Overall this is quite reliable and tasty effort, making it a good everyday wine for a wide variety of food. Perhaps best served with white meats, grilled fish or heavier salads.

Very dark purple ruby, with a vivid pink rim. The aromas seem to leap from the glass, offering up a fragrant spray of sweet berry fruit - noticeably grapey in character, but there is also some ripe blueberry, too. Quite elegant and smooth on the palate, and showing no signs of the alcohol level. Fine structure, with very good acidity, and a massive dose of deep berry fruit. No need to decant, just drink it straight from the bottle.
